2 medium cucumbers, peeled, seeded & cut into cubes
2 1/4 cup plain yogurt
1 garlic clove, thinly sliced
2 tbsp fresh mint, finely chopped
olive oil, to taste
salt & pepper, to taste
In a large bowl with cucumbers; add yogurt and garlic. Add mint, oil, salt and pepper; mix well. Serve with pita bread or fresh veggie slices.
