1 1/4 Cups quick cooking oatmeal
1 cup plain or fruit cup yogurt
1 cup buttermilk
1 teaspoon honey or sugar
1/4 cup all purpose flour
1/4 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
2 large eggs, beaten
1/4 cup walnuts or pecans
1. In a large bowl, combine oats, yogurt, buttermilk, and honey. Stir in flours, baking soda and salt. Add beaten eggs and mix well. Add chopped walnuts or pecans. BATTER WILL BE THICK.
2. Heat a large non-stick skillet or griddle on medium. Spoon about 1/4 of batter onto hot skillet for each pancake. Cook until bottoms are browned and bubbles start to pop, about 3 minutes. Flip and cook until other sides are browned, about 2 minutes. Add additional milk if batter becomes too thick.
Add maple syrup or fresh fruit. Approximately 12 pancakes.
