2 squares (2 oz.) unsweetened chocolate
2 cups flour
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup shortening
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 tablespoon instant coffee
1 teaspoon water
1-1/2 cups semi-sweet chocolate chips
3 tablespoons shortening
Melt unsweetened chocolate; stir and cool slightly. Mix flour, cinnamon, and salt.
In another bowl, beat shortening and butter with mixer; add sugar and brown sugar. Dissolve in water and add. Add melted chocolate and egg; beat well. Add flour mixture and beat.
Cover and chill 1 hour or more. Shape into 2 seven-inch rolls, wrap and refrigerate overnight. Cut into 1/4-inch slices, place on ungreased cookie sheet. Bake 10 to 12 minutes at 350 degrees.
Melt chocolate chips and shortening and dip half of each cookie. Set on waxed paper to cool.
