BBQ Corn Salad

4 ears fresh corn, husked
1/4 cup oil
1/2 red pepper, finely chopped
3 green onions, finely chopped
3 tbsp cilantro, chopped
3 tbsp lime juice
3 tbsp maple syrup
salt & pepper, to taste


Rub corn with 2 tablespoons oil. Grill on preheated BBQ grill for approximately 6 minutes or until lightly brown. Turn to brown all sides. Remove from grill.

Cut kernels off cob and place in large mixing bowl. Add red pepper, onion and cilantro.

In a small bowl; combine remaining oil, lime juice, maple syrup, salt and pepper. Pour into corn mixture and toss gently. Serve at room temperature.
