Left over chicken /Ham/Pork (chopped)
1 x Onion Chopped
1 x Clove of Garlic
A little olive oil for frying
A handful of spaghetti
Some fresh/ frozen garden peas
4 x tbs of malt vinegar
1 x tsp of caster sugar
1 x tsp of powdered chilli
This is a cheap meal and a great way of using left over chicken or ham or even pork. Put a pan of water onto boil with a little salt and then place your spaghetti into the pan once the water comes to the boil and leave to cook until tender. Now do the same with your peas and drain.
Take your left over meat and chop it up into manageable bit size pieces. Put some olive oil in a large frying pan place onion and crushed clove of garlic into the pan and soften then put in your chopped up bacon and left over chopped meat and fry until golden.
Then take your drained spaghetti and peas and place into your frying pan and combine with the bacon and chicken on a very low heat (all you are doing is warm it through.
For the chilli sauce, place you vinegar, caster sugar and powdered chilli into a small bowl and mix them together. Then take a warm bowel place your spaghetti, bacon, chicken and peas into the bowel and spoon over a couple of spoonfuls of the chilli sauce and serve immediately.
This really is easy and makes for a great TV dinner on a winter eveningâ€¦and its not bad cold either.
