2 Cans of Black Beans
1/2 Bottle Goya Sofrito Sauce
1/2 Bunch Scallions - Chopped
2 Cloves Garlic - Minced
half an onion - Diced
1 Jalepeno - Diced
1 Cup Vegetable Broth
2 Tablespoons Extra Virgin Olive Oil
1/2 teaspoon Ground Cumin Powder
1/2 small can tomato puree
Add evoo to heated pan - medium heat.
Add in Jalepenos, Onions, Scallions and Garlic. Stir until onions are light brown.
Add Black beans. Stir for 5 minutes
Add 3/4th bottle Sofrito sauce, stir for 5 minutes.
Add 3/4th tomato puree and cumin powder.
Add Vegetable broth... bring to a boil and then let simmer for as long as you can. I usually let it boil for about 45 mins to an hour. The more the better, just make sure to keep adding water so the consistency doesnt get too thick. At this point you can either leave as is, or use an emmersion blender to make the consistency smoother.
This dish is best when topped with cheddar cheese, sour cream, guacamole, and tortilla chips.
