Cabbage Salad

Delicious cooling salad, great for snacking or side dish.

Ingredients

1 small head red or white cabbage, chopped or grated (I often double this)
5 apples, chopped, (or 6 with the doubled cabbage), peeled and diced
1/2 to 1 cup minced raisns (cranberries also good, or currants)
4 tablespoons cider vinegar
3/8 cup olive oil
1 - 2 cups diced roasted pecans (easier to buy this way at Trader Joe)
