-1 large carton Campbell's reduced sodium chicken broth
-1/4 cup olive oil
-5 pieces garlic, peeled and roughly chopped
-1 large roma tomato, chopped
-1 large ripened avacado, peeled and chopped
-2-3 baby green onions, diced
-4-5 sprigs of cilantro, roughly chopped
-salt to taste
In a large saucepan, sautee chopped garlic in olive oil on medium -high heat. You want the garlic to be immersed in the olive oil, so that the hot oil turns the garlic deep golden brown. Once the garlic has beeen fried, pour in the chicken broth and boil for 10-15 min. Remove from heat and stir in tomato, avacado, baby onion, cilantro and salt just before serving.
