Salmon with minty vegetables

2 Salmon, fillets
new potatoes
green beans
handful of mint
juice of 1 lemon
olive oil


1. Boil potatoes
2. Place Salmon in a microwaveable dish, with the chopped mint, lemon juice and olive oil
3. Place beans in with the potatoes
4. Microwave Salmon for 5 mins
5. Serve Salmon on top of the potatoes, pour over the sauce.
