Some nice Mature Cheddar
knob of butter
Splash of Milk
1/2 teaspoon of wholegrain mustard
Fresh white Bread
Grate half a block of Mature cheddar into a saucepan.
Add the milk butter and mustard.
Thickly cut two slices of nice white bread.
Toast the Bread, and while toasting melt the cheese over a low heat until thick creamy and bubbling.
(If it doesnt thicken properly, mix some cornflour with a little more milk and add to the cheese to thicken.)
Butter the toast and place in a ovenproof dish.
Pour the cheese mix over the top, and brown under the grill.
Place each slice on a plate, with a little cucumber and lettuce, spoon remaining sauce on top.
