1kg good minced steak
1 onion peeled and finely chopped
pinch of cumin seeds
1 tablespoon coriander seeds
salt & pepper
handful of grated parmesan cheese
1 x big tablespoon of english mustard
1 large egg
115g bread crumbs
1 - Put the meat into a bowl. In a frying pan gently cook the onions in a bit of olive oil until softened but not coloured (about 4/5 mins). Add the onion to the meat.
2 - Using a pestle and mortat, smash up the cumin and coriander seeds with the salt and pepper until a fine mixture and then add to the meat. Then add the parmesan, mustard, egg, half the breadcrumbs and mix all together well.
3 - Lay some grease proof paper on a baking tray and sprinkle over some of the remaining bread crumbs. Shape the meat into 8 burgers by dividing the mixture and place ontop of the breadcrumbs. Sprinkle more bread crumbs on top of the burgers and pat down. Leave to chill for at least an hour before cooking.
4 - To cook the burgers, fry them in a little oil, depending on how thick the burgers are and how well you like them cooked, for around 10 minutes on a medium - high heat, turning every now and then.
