Simple Curry lentil Soup

1/2 cup diced white onion
1 choped carrot
1 clove finley diced garlic
1 tblspoon olive oil
1 cup red lentals
2 cups chicken stock
1 teaspoon curry paste or choice of indian spices(tumeric, cumin, paprika, ect.)


In a med pot bring garlic, olive oil, onion, carrot to a sizzle on med heat3-4 min or until tender, add lentals, chicken stock, curry or spices. Cover and bring to boil at med/high heat. Once boiling reduce to low heat, and allow soup to simmer for 10 to 15 min. Add extra stock if soup is too thick.
