1 Pkg. Tri-colour Rotini (or your favourite small pasta), cooked according to pkg. directions
1 C. Green Pepper, medium diced
1 C. Red Pepper, medium diced
2 fresh Roma Tomatoes, seeds removed, diced
1 Tbsp. Fresh Garlic, chopped
3 Tbsp. Sundried Tomatoes
1/2 C. Fresh Basil, chopped
1/2 lb Capicola Ham, julienned
1/2 lb. Genoa Salami, julienned
1/2 C. Roasted Red Peppers, medium diced
1/4 C. Parmesan Cheese
1/4 C. Romano Cheese
3/4 C. Extra Virgin Olive Oil
3/4 C. Balsamic Vinegar
Salt and Pepper to taste
Combine all pasta salad ingredients in a large mixing bowl. Mix evenly and chill until ready to serve.
