Bean Chalupa

Ingredients

1 lb pinto beans
3 lbs pork roast
7 cups water
1/2 cup chopped onion
2 cloves garlic minced
1 tablespoon salt
2 tablespoons chili powder
1 tablespoon cumin
1 teaspoon oregano
1, 4 oz. can chopped chilies
corn chips

Method

Place beans, pork roast, water, onion, garlic, seasonings, and green chilies in heavy kettle or dutch oven (crock pot will suffice).
Cover and simmer for 5 hours or until roast is tender and falls apart.
Break up roast and remove bones.
Uncover and cook until thick, about 1/2 hour.
Serve over corn chips with condiments.

Condiments: tomato, avocado, onion, lettuce, cheese, hot sauce, and sour cream.
