Chilli Spinach Paneer

2 Large Onions, sliced
1 Green Pepper, sliced
1 Yellow Pepper, sliced
2 Courgettes, washed and (yes) sliced
600g washed spinach
400g Paneer (Cubed Asian cheese)
2 tablespoons chopped garlic
1 tablespoon coriander pesto
I tablespoon chopped ginger
2 Teaspoons chopped chilli (or less, to taste)
2 Tablespoons Cumin Seeds
1 heaped Teaspoon Turmeric
2 Heaped Teasoons Paprika
1 Heaped Teaspoon Coriander Powder
1 or 2 tins of tomatoes
1 small can Tomato Puree


1. Add cumin seeds and onions to large pan and fry in a little oil

2. Add garlic, chilli and ginger pastes and fry a little (careful not to burn)

3. Add all other chopped veg and mix well. Fry for a few minutes

4. Add all powdered spices, mix well. Add tinned tomatoes after a minute or two

5. After ten minutes add Paneer Cubes (mixture should be simmering gently)

6. After five minutes add Spinach a handful at a time, allow to wilt into the mixture but not cook.

7. Add salt and black pepper to taste

8. Serve with pitta and/or Roasted New Potatoes in Olive Oil and Basil
