Chicken Masala

Like chicken tikka masala, but faster to cook

Serves: 2-4


500g diced Chicken / Turkey breast/thigh
250ml Double Cream
1 very small onion / half a medium onion
2 cloves garlic
Small (1 inch cubed) piece of fresh ginger
1 tin tomatoes
Sunflower Oil
1 tsp Turmeric
1 tsp Paprika
1/2 Tsp Salt
1 tsp chilli powder
1 tbsp garam masala
1/2 tsp cumin
1 tsp ground coriander
1 tbsp tomato puree
1 bunch fresh coriander, the more the better!


Fry the chicken until cooked through, 15-20mins.

Meanwhile, put onion, garlic, ginger, tomato, chilli, paprika, salt, turmeric, fresh coriander, tomato puree into the blender. Whizz. Or chop it up real small if you don't have a blender.

Chuck it into frying pan. Leave for 5 mins. Then add ground coriander, cumin, garam masala. Cream. Leave for 2 minutes, then serve with Naan bread or boiled basmati rice.
