spagghetti alla casalinga

1 packet of any spagg. you prefer (500g)
800g (12oz.) peeled tomatoes
2 carrots (chopped)
1 medium onion (chopped)
1 small bunch parsley and fresh basil
1 clove garlic (crushed)
50g (2oz.) butter
salt, freshly ground pepper
1 teaspoon vinegar


place the tomatoes, carrots, onion, parsley, and basil in a heavy saucepan. cook at medium heat for 30 minutes. stir now and then, add more warm water if the sauce gets too dry. cook spagg. according to the instructions on the box. when pasta is "al dente", remove all vegetables from the sauce. serve with lots pf parmigiano cheese. if the sauce is too sweet to your taste, add 1 teaspoon of vinegar before pouring over pasta.
