Best Ever Chocolate Cake

The richest and softest chocolate cake ever with a creamy white icing

Best Ever Chocolate Cake

½ cup cocoa
1 teaspoon baking powder
Pinch of salt
2 ½ cups flour
1 teaspoons vinegar
2 teaspoons of bicarbonate of soda
1 teaspoon vanilla essence
1 cup of milk
2 cups of sugar
2 eggs
2 cups boiling water


Mix cocoa, baking powder, salt and flour

Mix vinegar, bicarb, vanilla and milk in a jug

Cream butter and sugar until light and fluffy; add eggs one at a time beating well after each edition

Combine flour and egg mixtures and add the boiling water, fold until it is just mixed in

Pour into two greased tins and bake at 180C for 35-45 minutes

White Icing

3 tablespoons flour
1 cup of milk
1 cup butter
1 cup sugar
2 teaspoons vanilla essence

Whisk flour into milk in a saucepan and heat, whisk constantly until it boils and thickens
Cool this mixture while: Place butter and sugar in food processor and beat for 5 minutes until the sugar has dissolved, then add the flour mixtures that has cooled and the vanilla and beat until combined and ice the cake.
