1 lb ground beef
1 pkg taco seasoning
300 g of your cheese of choice (I've had good results with mozzarella, marble and old cheddar)
4 small flour tortillas
small can of your choice of tomato sauce
sour cream, green onion, and green pepper to garnish (optional, of course)
Prepare ground beef and taco seasoning as directed on seasoning package. Meanwhile grate the cheese :). Grease a regular sized, round casserole dish and put about 3 or 4 tbsp of tomato sauce in the bottom (enough to cover the bottom). Brush the first tortilla with tomato sauce (they will all be brushed with tomato sauce) and place in casserole dish, followed by a third of the meat mixture and topped with a handful of cheese. Repeat with two more layers of tortilla, meat and cheese and then top with the fourth and last tortilla. Spread the remaining cheese over the top (should be a fairly thick layer) and bake covered for 20 minutes at 400 F and for another 10 minutes uncovered at same temp. Garnish with sour cream and chopped green onion and peppers and serve with salad.
