One block of tofu
A generous glug of tamari or soy sauce
A good squirt of kethcup
A dash of Worcestershire sauce
A dash of Mushroom ketchup
A dollop of clear honey (or brown sugar for vegans)
A clove or two of garlic, crushed
If the tofu is quite wet then press it between two plates with a weight on top for about half an hour and drain off any extra fluid.
Combine all the ingredients except the tofu in a shallow dish.
Slice the tofu (one block usually does 4 good slices) and cover both sides in marinade. Leave for as long as possible, turning halfway through the marinade time.
Grill, broil or cook in a hot oven until the outside browns and turns slightly crisp.
