Berry Morning Muffins

Healthy, Vegan Muffins with a Tasty Kick! Add whatever berries ar in season. We used raspberry, but most will do!

Ingredients

1 cup rolled oats
1 cup whole wheat flour
1/3 cup maple syrup
2 tbsp. whole brown flax seeds
1/4 tsp. unrefined salt
2. tsp. non-aluminum baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. nutmeg
1 cup berries (I used Raspberries)
1 banana, mashed until smooth
1 cup milk (I used soymilk, but cows milk or rice milk would work too)
1/4 cup canola oil
1 tsp. vanilla
unbleached paper muffin cups

Method

Preheat oven to 400. Place oats and flax seeds in a blender and pulse 2-3 times until it is a flour consistency. Mix oats with flour, salt, baking powder, baking soda, nutmeg, and cinnamon. Fold in berries. In a separate bowl, whisk together the banana, milk, oil, and vanilla. Stir the milk mixture into the flour mixture, and mix well. Place the muffin cups into the pan, fill each cup 2/3 full. Bake for 15-20 minutes or until golden brown. Yummy!
