Cheese and Onion Enchiladas

Serves: 8 to 10


1 lb cheddar cheese
1 to 2 cans of hormel chili, no beans
1 large onion
36 corn tortillas

salt and pepper to taste


Dice the onion and cook in the skillet until translucent.
Heat tortillas in oil until soft.
Sprinkle onion and cheese into tortillas and roll them up, placing in a baking pan side by side.
Once the pan is full, pour chili over the top and sprinkle the remaining cheese over the top as well.
Bake on 350 for 30 minutes.
Serve with rice and beans.
