Vegetable Bhaji's

Preparation time: 10 minutes
Cooking time: 15 Minutes

Serves: 1-6

2 large Onions sliced thinly
1 Courgette sliced thinly
2 peppers (1 red, 1 yellow) diced
Mushrooms washed and sliced or halved if small

1 Large Tablespoon Paprika
1 Teaspoon Turmeric
1 Large Teaspoon Coriander Powder
1 Tablespoon Cumin Seeds
Galic, Chilli and Ginger to taste

1 small bag of GRAM Flour
Small frying pan or Small Pan


Put a large amount of Gram Flour in a large bowl

Add water a little at a time (Gram flour needs only a little water to make a thick batter) until batter is really thick

Add all sliced vegetables

Add all the powders and garlic/ginger/chilli

Mix everything well

Mixture needs to be thick enough to hold together in a frying pan - if it is too thick add only a little water, if too thin add more flour. Mix well.

Heat oil (I use sunflower oil) in whatever pan you use (Shallow frying is healthier)

Using a large spoon drop lumps of mixture into the hot oil

If you are shallow frying flatten lumps into burgers

Turn after a minute or two

Remove and drain when Bhaji's are golden and cooked

Eat hot and enjoy
