1 witch sole (no, I'd never heard of one before either)
slug of olive oil
salt + pepper
reheat oven to 180; clean the fish and pat dry; place on a baking tray, squeeze over half a lemon, then rub with olive oil. scatter with coarsely ground black pepper and flakes of sea salt; bake in the over for 20 mins. Serve with braised chicory, salad and new potatoes. Now, if only I wasn't on a diet and could have a nive half bottle of decent dry white with it.....
