Preparation time: 15 mins
Cooking time: 30 mins
1 packet of chicken fillets
1 large sweet red pepper
1 yellow pepper
3 cloves of garlic
a few handfuls of button mushrooms
1 large green chilli
Cover chicken on both sides in the cajun seasoning (or earlier for a stronger flavour)
Bring a large pan of salted water (add a dash of olive oil) to the boil and then add three handfulls of penne pasta per person and bring back to the boil. Cook for the amount of time stated on the packet (about 8 mins) then drain and put to one side.
Whilst pasta is cooking:
Dice onion & garlic
Cut peppers into strips.
Finely chop chilli
Heat 3 glugs of oil in a wok on a medium heat.
Add onion and garlic and stir continually until softened.
Add chicken and turn up the heat to full and keep turning the chicken fillets until cooked through on both sides.
Remove contents of wok to a bowl.
Turn heat to medium and heat 3 glugs of oil in wok
Add the peppers & chilli and soften slightly before adding the mushrooms. When the mushrooms have cooked return the chicken and onion mixture to the pan and add the coriander.
Check the chicken is hot and then add the pasta to the wok stirring until the pasta has warmed through.
Distribute wok contents between 3 pasta bowls and then eat.
