Jambalaya

Lovely creole risotto with chorizo and chicken

Ingredients

2oz Butter
2 Onions
2 Garlic Cloves
5 chopped celery sticks
1 red pepper
1 green pepper
1 tsp cajun spice mixture (consists of salt, black pepper, ground cumin, cayenne,paprika about 1-2 tsps each)
8oz long grain rice
1 can chopped tomatoes
1lb meat of choice (I use chicken breast and chorizo)
1 cup(8floz vegetable stock)
1tsp Salt
Parsley sprigs

Method

Melt butter in large pan and add onions,garlic, celery,peppers and spice mixture and mix well.

Add the rice and stir well and coat with mixture

Add the tomatoes, meat, stock and salt. Bring to the boil and stir well.

Reduce the heat, cover and simmer for about 15 minutes or until rice is fluffy and water absorbed. If mixture too dry keep adding cupfuls of water during cooking time .
Add parsley at end to garnish
