Easy Bean and Barley Soup

Preparation time: 30 minutes
Cooking time: 4-8 hours

Serves: 6


1 can beans in tomato sauce
2 medium potatoes, peeled n' finely chopped
1 stalk celery, finely chopped
1 large onion, finely chopped
2 leeks, white parts, rinsed and sliced
2 medium carrots, diced
6 cups beef stock
1/2 cup pearl or pot barley, rinsed
pinch of ground nutmeg


1. In a slow cooker stir all ingredients together.
2. Turn on the crock pot and cook on low for 8 to 10 hours or on high for 4 to 6 hours.
3. Easy, huh!
