6 boneless chicken thighs halved
1 tbsp olive oil
4 cups baby spinach
1 pckg minestrone dry soup mix (knorr)
1 can diced tomatoes
1/4 cup fresh basil or 1 tbsp dry
handful sliced black olives
1 cup shredded mozzarella
In large skillet, heat oil and brown chicken pieces.
Arrange chicken in a well greased glass baking dish - place spinach over chicken. Combine the soup mix with tomatoes and basil and olives and pour over spinach. Cover with foil and bake for 55 minutes at 350 degrees. Uncover and sprinkle cheese and broil until cheese is golden and bubbly.
let sit for a few minutes then serve with crusty bread.
