half a green pepper
4oz (115g) tomatoes or use tinned toms
1oz (30g) walnuts
7oz (200g) can of red kidney beans
1 tblsp vegetable oil
1oz (30g) desiccated (shredded) coconut
1 tsp tomato paste
1 tblsp water
1. Put the rice on to cook.
2. Chop the pepper, skin & chop the tomatoes, coarsely chop the walnuts, drain & rinse the beans.
3. Heat the oil in a saucepan. Sauté the pepper for 1-2 mins.
4. Add the tomatoes, walnuts, beans, coconut, tomato paste and water to the saucepan. Simmer for 10 mins, stirring occasionally.
5. Serve over the rice.
