175g red lentils
1-2 onions, sliced
2 tbsp sunflower oil
3 cloves garlic
2 + 1 tsp cumin
1/2 tsp chilli powder
Handful of fresh mint and /or coriander
Salt and black pepper
Fry the onion in the oil until browned, then add 2tsp cumin, the chilli powder and the garlic. Fry for 1 minute.
Stir in the lentils and coat with the oil, and then add the water.
Cover and simmer for about 25 minutes, or until the lentils are soft.
Remove from the heat, add 1 tsp salt, a grinding of black pepper, the herbs, 1 tsp of cumin and the juice of a lemon. Stir and serve.
