Chicken, Tomatoes & Roasted Peppers

Easy recipe based on chicken cacciatore

Cooking time: 1.5 hours

Serves: 3 to 4


6 or 8 boneless, skinless chicken thighs (thawed)
1 large can diced tomatoes (796 mL/28 oz)
1 red pepper chopped into large pieces
1 green pepper chopped into large pieces
1 onion chopped into large pieces


Lay the chicken in a baking pan, cover with diced tomatoes and sprinkle the pepper and onion pieces over the top. Put into a 350 degree oven for 1 to 1.5 hours.

When done the chicken should be tender and falling apart and the peppers and onions should be roasted and blackened.

Serve over rice.
