Smoked Tofu and Sesame Salad

1/3 cup white sesame seeds, toasted
1 ts sugar
1.5 Ts soy sauce
1 ts fresh ginger juice
1 ts rice vinegar
14 oz Chinese greens or broccoli, cut into peices
7 oz smoked tofu, cubed
2 spring onions, finely sliced
sesame seeds as needed


Put toasted sesame seeds, sugar, soy sauce, ginger juice, and vinegar into a blender with 1/3 cup of water. Blend until it forms a rough paste. Blanch the greens in boiling salted water until they turn bright green and are tender.

Pile the greens onto a plate with the tofu, gently pour the sesame dressing over the salad. Garnish with the spring onion slices and sesame seeds.
