Black Bean Soup

Ingredients

1 onion, diced
8 oz. fresh mushrooms, sliced
1 bunch green onions, sliced
2 cloves garlic, minced
1 tsp olive oil

1/4 cup wine to deglaze the pan
1 tsp salt
1 chipotle pepper- puree in mixer first.
(also may use chipotle canned in adobe sauce)

1 can of black beans
2 tbsp Worchestershire Sauce
1 can crushed plum tomatoes
1 small bottle of sundried tomatoes, sliced
1 fire roasted sweet pepper, diced
3 cups of corn kernels, roasted if possible, frozen when fresh isn't available

enough water or stock to cover or to your preferred consistency.

Honey or maple syrup to taste

Optional:

1 pound of ground beef, browned and drained.

Serve with corn bread.

Method

Saute the onions, mushrooms, garlic and green onions in olive oil. Add the rest of the ingredients and simmer until flavors marry.
