Mango Salsa Corn Cups

pretty good appetizers - kinda weird. maybe omit black beans and add garlic. needs something else, but not sure what...

10 6" corn tortillas
2 mangoes, peeled and diced
1 cup black beans
3 green onions, chopped
2 jalapeno peppers, minced
2 t fresh ginger, minced
1/2 cup cilantro, chopped
3 T lime juice
1 T brown rice syrup
salt and cayenne pepper, to taste


Cut tortillas into 2" circles. Brush sides with vegetable oil and press rounds into mini-muffin tins.

Bake at 400 degrees until crisp.

Combine all ingredients and season as needed. Heap salsa into corn cups and serve.
