Vegetable Pie

1 Onion (diced), 3 medium Potatoes (diced), 2 cups mixed Vegetables (chopped), 5 Eggs, 1/2 cup Cream, 1 cup grated Cheese, 6 Bacon Rashers (chopped)


Pre-heat oven to 180 deg. Grease pie dish.

Brown bacon, onion and potatoes in frying pan with a little oil. Add veges, reduce heat, simmer until tender. Spoon mixture into pie dish.

Whisk together eggs, cream and cheese. Spread over vege mixture in pie dish.

Cook in 180 deg oven for 35 mins. Allow to rest for 15 mins before serving.
