Red Lentils!

Vegetarian dish that I make at least three times a week with red lentils and whatever vegetables I have available

split red lentils, carrots, frozen spinach, frozen broccoli, low sodium soy sauce, teriyaki sauce, garlic, onion, and whatever vegetable you want


Spray some PAM at the bottom of a sauce pot and then toss in chopped carrots, chopped garlic, and finely sliced onion, turn on the hob. Measure about 1/4 cup of lentils and add about half a cup of water. Toss lentils and water into pot, add soy sauce and teriyaki sauce, bring to boil. Once it starts to boil, add frozen vegetables of your choice, and then reduce heat, cover, and let simmer. Honestly, the time really depends on the amount of veg that gets chucked in, when lentils are ready they are a different color and very puffy.
