Caitlin's Key Lime Pie

I got this recipe from Caitlin and made it for a summer BBQ where it was a huge hit! Make it with fresh whipped cream to really impress people.

Cooking time: 15 mins

1 graham cracker crust (be sure to look for one that is free of hydrogenated oils)
1/2 cup key lime juice (about 30 key limes)*
3 egg yolks
1 (14 oz) can of sweetened condensed milk

* I like to use fresh lime juice, but I heard a rumor you kind buy lime juice in the store, too.

Whipped Cream:
1 cup heavy cream
1 teaspoon powdered sugar
1/2 teaspoon vanilla extract


Combine all ingredients into a bowl and mix well. Bake at 350 degrees for 15 mins. Cool and then refrigerate until cool (about an hour).

Whipped cream: Combine all ingredients into a food processor or blender. Blend until it puffs up and looks like whipped cream (more like cool whip than redi-whip). Prepare just before serving.
