oven roasted pollack steaks on a bed of mediterranean vegtables with black pudding

2 large pollack steaks (or any other flaky round white fish - ling's good; you could use cod, of course, but there aren't many left.....)
1 red pepper
1 aubergine
1 red onion
2 courgettes
salt and pepper
basil and parsley
olive oil
a fine black pudding


cut the vegetables up into large chunks - nothing fancy. chuck in a roasting tin, and annoint with olive oil into which you have mixed finely chopped basil and parley; season with salt and pepper and toss about to throughouly coat. Roast in a medium-hot oven (c.180) for about half an hour.

rub the pollack steaks with olive oil and season. After you have roasted the veg for about half an hour, turn it up to c.200 degrees and chuck the steaks in on top for c. 15-20 mins, depending on the thickness of your fish - don't overcook it! Meanwhile, crumble you black pudding and fry until crisp. When the fish is cooked and the veg just crisping, remove from the oven; scatter over some crispy black pudding and serve!
