EASY Tortilla Soup

Cooking time: 30min or as long as you like



1 rotisserie chicken, skin off shredded
~48oz of chicken stock
3 lbs of tomatoes, skin off, deseeded and diced
1 tblsp cumin
1 tblsp salt or to taste
pepper and paprika to taste
a couple of jalepano and banana peppers (1-2 if your a light weight, 3-4 if you're a heavy weight), deseeded and diced
about 3 ears of corn, kernals removed or I guess this about a 12oz bag of frozen corn
1 large onion diced


1. into a lg dutch oven add oil and onion, cook about five minutes
2. then add peppers, chicken, cumin, salt, pepper and paprika and stir to coat well, cook 2-3 min
3. add diced tomatoes and chicken broth
4. bring to boil and simmer about 30min (longer is fine too and taste even better)
5. serve with homemade tortilla strips or chips-- this is really easy too, just cut up some tortilla's, spray with olive oil , sprinkle with salt, paprika, cumin and even some lime, spread on a flat sheet and bake until crispy 375deg/~30min
