Dietary guidance: v
3 large garlic cloves, minced
3 T olive oil
1/2 cucumber, peeled and sliced thinly
1/2 small red onion, sliced thinly
2 T red wine vinegar
1 T sesame seeds
1/4 cup sliced black olives (or Kalamata olives if you like 'em)
2 6" pitas, cut horizontally along seam
grated jack or cheddar cheese
butter, for frying/sauteing
oregano, to taste
red bell pepper, cut into strips, for garnish
Combine cucumbers, onion, oregano, vinegar, sesame seeds, garlic, and oil in medium bowl and set aside to let marinate.
Butter sides of each pita half, place in skillet over medium heat, and sprinkle on some cheese.
Drain cucumber salad and spoon some on each pita half. Top with feta and other pita half. Cook in skillet until cheese melts. Garnish with bell peppers. Yum.
