2 tbsp Olive Oil
2 tbsp Butter
1 onion, chopped
1 red bell pepper, seeded and chopped
1 green bell pepper, seeded and chopped
2 cups cooked chicken breast meat, cut up
3 cloves of garlic, chopped
1 tsp white sugar
1/4 cup Pure Maple Syrup
1 cup heavy cream
2 1/2 tbsp hot curry paste
Heat butter and oil in a large skillet over medium heat. Add onion and peppers, and cook until onions are soft. Stir in cooked chicken and garlic, and sprinkle with sugar. Cook, stirring for about 3 minutes, then stir in maple syrup, and cook for about 5 more minutes, until carmelized.
Stir in curry paste and heavy cream, reduce heat to low. Simmer uncovered for 10 minutes, or until sauce reaches desired thickness. Toss with cooked penne pasta.
