Smoked salmon and feta linguine

75g smoked salmon (or trout), cut into small pieces
50g feta, chopped into bite-sized cubes
juice and rind of one lemon
one clove garlic, chopped
one red chilli, chopped, no seeds
tablespoon small capers, drained and rinsed
olive oil
parsley to garnish
250g dried linguine


1. Gently fry the garlic and chilli in olive oil – just until the garlic is very slightly cooked

2. Allow to cool, and start cooking the pasta

3. While the pasta is cooking, put the salmon, capers and lemon juice and rind into the cooled oil/chili/garlic mixture to let the flavours mingle

4. When the pasta is cooked, mix with the above, plus the chopped feta.

5. Garnish with chopped parsley
