Raspberry Almond Tarts

1/2 cup sugar
3 TBSP Butter
1 Egg
1 tsp Almond Flavoring
4 TBSP Rice Flower
12 Tart Shells (can be premade frozen)
Raspberry Jam


Cream butter & Sugar.
Add Rice Flour - Mix
Beat Egg in small bowl. Add Almond Flavor to egg, beat some more.
Add egg to Creamed mixture
In tart shells put small amount of Raspberry jam in bottom.
scoup small amount of batter ontop of raspberry jam in tart shell. Use a fork to ensure all jam is covered.
Bake in Oven - 350 for 20 - 30 minutes until top is a golden brown color - do not over bake.
Enjoy - you will not be able to only eat 1.
