Honey Rosemary Chicken

A very simple way to marinate chicken for a lovely flavour. Using fresh rosemary makes all the difference.

Preparation time: 10 m, + 2 hrs fridge
Cooking time: 1 hour

Serves: 3


1/8 c honey
1/2 c balsamic vinegar
1/8 c minced fresh rosemary
1 T oil
3 chicken breasts, thawed
1/2 t salt
1/8 t pepper


Mix honey, vinegar, rosemary and oil. Pour half into a baggie and add chicken. Seal the bag, turning to coat, and let sit in the refrigerator at least two hours. Drain, discard chicken marinade. Place in a baking pan, sprinkle with salt and pepper. Bake uncovered at 350 degrees for 55-65 minutes, basting occasionally with the reserved marinate.
