Tuna Fritata

This is a perfect healthy lunch time meal when having friends over or to take to work served hot or cold with a side salad.

Preparation time: 10 min
Cooking time: 15 min or until light brown on top

Serves: 4


6 Eggs
400g Can Tuna
200g Corn Kernals
hand full of baby spinach leaves
few leafs of basil roughly chopped
1 carrot sliced
1/2 Capsicum
1 tomato diced
broccoli cut into small pieces
1/2 cup of light grated cheese
(basically you can put any vegies you have in it and instead of tuna you can put anything like strathsburg or even go vegetarian.


beat eggs and combine all other ingredients except for the cheese. Pour into a non stick sqaure tin, sprinkle grated cheese on top and put into an oven at 180 degrees. Cook until top is slightly brown, approx 15 min. Serve with salad
