Snowball - Vanilla Cake with Coconut Cream Cheese Frosting

1 Supermoist French Vanilla Cake Mix
1 Package Sweetened Coconut - shredded or flaked

1 Stick Butter - 1/2 Cup (room temperature)
1 Box Cream Cheese - 1 Cup (room temperature)
3&3/4 Cups Icing Sugar
1 Teaspoon Vanilla


Bake cake according to package instructions. I use 2 - 9 inch round pans. Cool completely before frosting, about an hour.

Cream butter and cream cheese with electric mixer for 1 minute on medium speed or until well blended. Slowly add icing sugar - continue beating until well mixed - add vanilla and blend until combined. You may have to add a bit of milk, if the consistancy is to thick.

I like to flip my cakes upside down - so your frosting the down side. This keeps the cake from being lop-sided.

Apply frosting to first layer. Sprinkle coconut over top to cover the cake completely. Add second layer, frost and sprinkle coconut on top and sides of cake. Refridgerate a few hours before serving.
