Funnel Cake

2 eggs, beaten
1 1/2 cups milk
1/4 cup brown sugar
2 cups all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 cups cooking oil
powdered sugar (for dusting)


In a large mixing bowl, stir together the eggs, milk, and brown sugar.

In another bowl combine flour, baking powder, and salt.

Add the flour mixture to the egg mixture, and beat until smooth.

In a 8-inch skillet, heat cooking oil to 360 degrees, or place a little batter in the oil, if it floats and sizzles a little, it is the right temperature, if it floats a browns really quickly it is too hot.

Fill a measuring cup with batter, and pour the batter into hot oil. Start in the center of the skillet and move the measuring cup in a circular motion to form a spiral.

Cook 2 1/2 minutes or until golden brown. Using two wide spatulas, carefully turn funnel cake over. Cook for another minute or until other side is golden brown.

Dust with powdered sugar and put any other topping you want.
