Ranch Chicken

A simple chicken dish that will leave your neighbours drooling at your door

-2 Boneless chicken breasts
-1 Large potato
-Handful of baby carrots
-Handful of broccoli
-6 Mushrooms
-750 ml Ranch dressing
-350 ml Water(optional)
-2 tbls Stir-fry sauce
-1/4 cup Parmesan cheese
-1/8 cup Sesame seeds
-1/8 cup Bacon bits
-Sprinkle Parsley


-Pre-heat oven to 400°
-Place chicken breasts beside each other in a large casserole dish (you want there to be room left around the chicken)
-Spread 1 tbls of stir-fry sauce across the top of each breast
-Cut potato into ½ inch slices (if you cut the potato too thick it will not cook)
-Place potato slices around the chicken (do not double layer the potato or put potato onto the chicken)
-Cut vegetables into bite size pieces (I suggest carrots, mushrooms and broccoli, but you can use any veggies you like. Just be careful with celery, it can overpower the taste of the chicken)
-Mix ranch dressing and water to desired consistency. (if you like a very rich taste use no water at all, if you like to not be overpowered by the taste use all the water. I like it with no water, my husband likes it with a small amount of water, you have to play with it to figure out what you like)
-Pour mixture on chicken, potatoes and veggies until you have just covered everything
-Layer the top with parmesan cheese, bacon bits, sesame seeds and parsley.
-Bake for 45 min to 1 hrs
-Let stand for 5-10 mins.
