Swiss and Mushroom Quiche

From Molly Katzen's "Moosewood Cookbook", this is one of the only recipes with repeated success. :)

Preparation time: approx 15 minutes
Cooking time: 35-45 minutes

Serves: 4-6

1 9-inch pie crust
1 cup grated Swiss cheese
1 medium onion, chopped
¼ lb mushrooms, sliced
3 eggs
1¼ cups milk
2 Tbs flour
1 tsp butter


1. Preheat oven to 375º.
2. Put butter in a small saucepan. Add onions and sauté until they begin to turn translucent. Add mushrooms and sauté for about 5 minutes more, then remove from heat.
3. Combine eggs, milk, and flour in a blender and beat well.
4. Spread grated cheese on bottom of unbaked crust, and spread the onion/mushroom mixture on top. Pour in egg/milk custard (careful, sometimes your pie doth runneth over).
5. Bake for 35-45 until solid in the center.

You can also add things into the quiche, such as diced tomato, diced bell pepper, or bacon bits if you're sick of being vegetarian.
