Vegan Chocolate Cake

1 1/2 c. whole wheat flour
3/4 c. sugar
1/2 tsp. salt
1 tsp. baking soda
1/4 c. unsweetened cocoa powder
3 tbsp. whole flax seeds
1 1/2 tsp. vanilla extract
1/3 c. canola oil
1 tbsp. white distilled vinegar
1 c. cold water
Unbleached paper cups, if making cupcakes


Preheat oven to 350.
Combine flour, sugar, salt, baking soda, flax seeds, and cocoa powder in a bowl until thoroughly combined. Create a well in the center of your dry ingredients. In a separate bowl, combine the vanilla, oil, vinegar, and water. Make a well in the center of the dry ingredients, and pour the wet ingredients into it. Mix until just combined. Pour into prepared pan, and bake in preheated oven for 30 minutes if you are making cake, 15-20 if you are making cupcakes.

Pull out and cool on a wire rack when an inserted toothpick comes out clean. Completely cool before frosting.
